Thomasville Tomme - Another tasty cheese from Sweet Grass Dairy. A dense texture and slightly nutty flavor make this cheese ideal for snacking with crackers and a local peach preserve. Wine pairing - Pinot Grigio! Raw Cow's milk- $17/lb
Green Hill - A brie-style cheese with a rich flavor, fresh grassy taste and a mild finish. This cheese is wonderful in baked brie and is the perfect size for picnics or concerts. Try it with a slightly sweet Riesling. Pasturized. Cow's milk - $10.99/ea
Garroxta - A Spanish goat’s milk cheese with tons of flavor and a silky smooth texture. Pairs well with almonds and dried fruits on a cheese plate. Enjoy this cheese with a Tempranillo. Pasturized. Goat's milk- $20/lb
Manchego - Perhaps the most well-known of all Spanish cheeses, Manchego is a classic in recipes, on sandwiches, or as a table cheese with figs and dates. The raw sheep’s milk gives this cheese a tangy finish. Complement it with a big, bold Spanish red such as Rioja or Ribera del Duero. Raw Sheep's milk- $15/lb
Crater Lake Blue - From the Rogue Creamery in Oregon, this blue cheese has an intense and complex flavor with notes of spice and herbs. Pair it with a sweet preserve and a Syrah or Port for a delicious treat. Pasturized. Cow's milk- $20/lb
Midnight Moon - This cheese is the pride of Cypress Grove Dairies of California. A gouda-style goat’s milk cheese with a surprisingly sweet flavor and a citrusy finish. Enjoy it with a Sauvignon Blanc or Pinot Grigio. Pasturized. Goat's milk- $20/lb
Fontina Valle D’aosta DOP - The one and only true Fontina. A classic Italian raw milk cheese with an earthy flavor and ultra-creamy texture. Great on sandwiches, pizzas, or as an appetizer with nuts and fruit. Enjoy it with a Pinot Noir or Chianti. Raw Cow's milk- $17/lb
Piave DOP - Although this cheese shares some characteristics with Parmiggiano, it has a complex palate with a nuttier, milkier flavor. It can be grated on pizza or pasta, but is exceptional with a sweet jam and a glass of Pinot Noir. Pasturized. Cow's milk- $15/lb
Gruyere AOC - The true Swiss cheese, Gruyere is a classic for a reason. Bold, salty, and nutty, this cheese is versatile in the kitchen and great on a cheese board. Use in Mac & Cheese, on paninis, in fondue, or as a snack with apples or pears. Pair it with a French Bordeaux or Cabernet Sauvignon based wine. Raw Cow's milk- $15/lb
Bayley Hazen Blue - From Jasper Hill Farms in Vermont, this blue cheese is similar to a Stilton, but with a sweeter flavor and rich complexity. Delicious with pears and a California Pinot Noir. Raw Cow's milk- $20/lb
Cabot Clothbound Cheddar - A truly fantastic American Cheddar. Done in the traditional British style but with flavorful milk from the spring pastures of Vermont. Earthy and dense with a slightly crumbly texture, this cheese is excellent with a California Merlot or Australian Shiraz. Pasturized. Cow's milk- $20/lb
Chimay a la Biere - This cheese has attitude! Rich cow’s milk from Belgium is washed repeatedly in Chimay beer, imparting yeasty, fruity flavors to the cheese. Pairs well with its namesake beer, but also with a French Burgundy or Beaujolais. Pasturized. Cow's milk- $14/lb
Pecorino Toscano - Pecorinos are a category of Italian sheep’s milk cheeses with a notoriously salty and sharp flavor. Usually grated over pasta or salads, this pecorino from Tuscany is much nuttier and sweeter than its Roman cousins and is delicious as a table cheese with a Chianti Classico. Pasturized. Sheep's milk- $15/lb
San Andreas - This cheese holds a blue ribbon from the American Cheese Society- try some and you’ll immediately agree! A delicate flavor with a nutty, slightly spicy finish makes this cheese great for an after-dinner treat. Enjoy with cured meats and a sweet spread alongside a bottle of Merlot or a Spanish Rioja. Carmody - Another award-winner from Bellwether Farms in California. Slightly sweet and perfect for breakfast with fresh fruit. Pair with a young California Cabernet or 2007 Chardonnay for a winning combo. Pasturized. Cow's milk- $15/lb
Kinara - This delicious Italian cheese is washed in artisan beer and has a pleasant vegetal flavor. Combine this with its rich and creamy texture and you’ve got the perfect cheese for savory dishes. Serve with cured meats, nuts, and a hoppy beer. Pasturized. Cow's milk- $22/lb
Sottocenere Al Tartufo - This cheese has a mild flavor of sweet Italian pastures that is perfectly complimented by a hint of black truffle. Great for a cheese board or melted on burgers for a gourmet touch! Try with a Malbec or Merlot. Pasturized. Cow's milk- $22/lb
